The Vent Balaguer is the Occitan word for the southern wind, which comes from Spain, warming up as it crosses the Pyrenees. The Petit Manseng grapes, harvested when overripe, are stored in crates in order to perfect their ‘passerillage’. The grapes gradually change colour, going from golden to brown; their taste also changes, and notes of apricot, candied orange peel and medlar emerge. Quite simply magical!.
